#Food: Breakfast Ideas for a Sunday Morning

Nigerian breakfast recipes consist of the different kinds of foods that are eaten in Nigeria in the morning, I hope to make this list as comprehensive and detailed as possible by including even children’s morning recipes.
This page would be beneficial to folks in Nigeria that are clueless as to what to serve a Nigerian Person in the morning as well as non-Africans that are married to a Nigerian men/woman (just in case you want to make a surprise breakfast for your spouse).
I get questions daily about “Nigerian breakfast ideas”, most people wanted to know what Nigerians eat in the morning.
I would go along to list the very simple and easy to make Nigerian breakfast recipes and then a detailed instruction on making them, I will also include a link to videos where necessary. It is advisable to go on very light foods in the morning, certain simple meals that will unlock your neural pathway for the rest of the day.

This recipe is very easy to prepare and comes in handy especially when you are in a rush to meet up with office hours. Most people in Nigerian are comfortable with just tea and bread but occasionally I fry eggs to complement the recipe.

Another easy to make breakfast recipe in Nigerian is Indomie noodles. Indomie is a special kind of noodle in Nigeria that would serves as breakfast for both adults and children alike. I thought they were for kids until I discovered this particular recipe.

Here are some of the many different food combinations that could serve as breakfast to a Nigerian, I took the images while enjoying these meals myself likewise lots of other images you find on this site. There is likely no Nigerian food that I am yet to taste, I experiment wildly and also make lots of them in my own kitchen.

This is pap (akamu, ogi) in a plate and a combination of fried plantain and eggs.
Ogi (pap) is very simple to prepare it takes the same procedure as in making custard, you will find helpful video here on Making Akamu (pap, Ogi).
The last on my list of Nigerian breakfast recipes is beans and bread (you will know what I am saying if you live in Lagos Nigeria. The country’s most industrious state). It is called bread and ewa here in the Yorubaland and a plate is sold for less than 300 naira

Bread and ewa are popularly made and served in local Nigerian restaurants. The making of the beans for this recipe is completely different from other beans recipes. I keep thinking about my favorite breakfast recipe, a newly discovered recipe. It is just a combination of jellof rice and good amount of vegetable salads with little or no cream, I try to keep my family away from canned foods as much as I could.
Nigerian Breakfast Recipe
These are good example of light and simple Nigerian breakfast inspiration. Although, some of them may take a while to prepare, I make things easy by stocking my fridge with every necessary ingredient and foodstuff.
I live in Lagos, western Nigerian and as a working-class lady I often eat breakfast in my office, I buy from restaurants that are close to my office most of the times. During this time I have been able to experiment different kind of Nigerian foods that could serve for breakfast and I would list some of them here and then others that I make at home on weekends or during holidays.

#Food: Beef roll ups with ugu filling


It's no secret that beef is a big part of the Nigerian diet. We practically use it for most of our cooking in soups, stews, main dishes and so on. One of the ways we enjoy beef is by mincing the beef as i did here and here or cutting it up into chunks and cooking as shown here, here and here or slicing it up as shown here. But have you tried rolling it up? This is a really new and nice take on how to prepare beef which i'm sure you'll love. It's got a leafy vegetable filling and can be paired with rice, yam, potato, beans and just about anything. Enjoy!. 

How to make beef roll ups
• Prep time:  
20 minutes
• Cook time: 5-10 minutes
• Total time: 30 minutes
• Level:         Easy

Ingredients:::
• 5 thin sliced beef
• 1 tbsp. chili powder
• 1 tbsp. garlic powder
• 2 tbsp. vegetable oil
• Salt to taste

The filling:::
• A handful ugu leaves
• 1 medium sized yellow pepper
• 1 medium sized red pepper
• 1/2 small red onion
• Salt to taste 

Other things you'd need
• A string or toothpicks 

Instructions:::
Step 1: Place the beef slices on a chopping board. To know how i sliced the beef, i used a sharp knife to cut off thick rectangle slices. In a bowl, mix the chili powder, garlic powder, vegetable oil and salt to taste together. Brush this over the top of the beef slices and leave the beef to sit while you prepare the filling. 

Step 2: To prepare the filling, chop the ugu leaves, yellow pepper, red pepper and small red onion. 

Step 3: Place an empty pan on the burner, add the vegetable oil and heat it up for 30 seconds. Add the onion, yellow and red pepper and stir fry for 1 minute. Add the chopped vegetable, salt to taste and stir fry for 1 minute. Turn off the burner and leave to cool.

Step 4: On the center of each flattened beef, divide the vegetable stir-fry between the 5 beef slices. Once done, roll up each beef and secure with a string or toothpicks so the content doesn't fall off. 

Step 5: Spread the rest of the spice mixture over the beef roll ups and place them on a grilling rack. Leave to cook in the grill for about 5-10 minutes on all sides. 

Step 6: Once done, remove from the heat and leave to cool for sometime before removing the strings. 

Step 7: Slice them up with a sharp knife and serve!

Well, we wake up everyday thinking about what to have for breakfast, for those who go to church early they try to see if they can force down one slice of bread (some others fast to church and are very hungry when they arrive). We found a solution for you! Thanks to Matse!!! Your family shouldn't have to eat the traditional bread and tea every morning, we found something new, well, maybe not new but i'm sure most of you haven't seen this before!!!

Think about this, eating dodo and eggs as a single meal packed with the delicious goodness of vegetables, meat, herbs and spices. Yep yep! That’s what I am talking about. A burst of flavours in one forkful.
This was what I intended to do making this recipe. I enjoy Nigerian and western fusions. It gives character to a meal. A frittata is an egg based Italian dish, similar to an omelette. It is very versatile.
My hubby had this for breakfast and he said; “Baby, this is delicious”. I had to wrap up some extras in an aluminium foil for him to take out as lunch. Trust me, this may end up becoming a Sunday morning breakfast recipe in your home.

Now, let me show you how to make this very easy meal.

As usual, I love making meals with easily accessible ingredients that you can find in your local stores or supermarket. Feel free to be creative with your spices, vegetables and cold cuts (ham, bacon, sausages).

Get some ripe plantain, slice or dice them if you wish.

Fry in hot oil until golden brown or spray with olive oil and bake in an oven (for the health freaks).

Slice/dice the vegetables.

In a bowl, break the eggs and add all the spices and herbs. Mix together thoroughly.

Transfer the egg mix into a bigger bowl and add the vegetables to it, then mix together.
* If using ham, bacon or sausages, fry in a pan and cut into bits to add to the mix. I was in a hurry to give hubby his breakfast and had little time to fry my cold cuts.

Pour the mix into a greased pan and spread evenly with a fork.

Cover and set over low heat for 10 minutes.

Then, transfer to a pre-heated oven and bake for 5 to 10 minutes until it is set.

Ingredients
  1. 2 ripe plantains
  2. 4-6 eggs
  3. 1 green pepper
  4. 2 big habanero pepper
  5. 1 medium size onion
  6. 1 cup beans sprouts (optional)
  7. 1/2 teaspoon garlic powder or crush and add 2 cloves of fresh garlic
  8. 1/2 teaspoon paprika (optional)
  9. 1/2 teaspoon dried oregano (optional)
  10. Seasoning cubes
  11. Salt to taste
  12. 1 cup vegetable oil to fry plantain
Instructions
  1. 1. Cut and fry or bake plantains.
  2. 2. Slice vegetables.
  3. 3. In a bowl, mix eggs with all the spices and herbs. Then transfer to a bigger bowl and add the vegetables and fried ham, bacon, sausages etc. Mix properly together.
  4. 4. Transfer content to a greased non-stick pan. Set over low heat, cover with a lid and cook for 10 minutes.
  5. 5. Then transfer into a pre-heated oven and bake for 5 to 10 minutes until it is set.
Notes

When I think of pancakes, I think of my Aunt Kate Mokwenye. We call her “Mama Danny”. She is such an innovative cook and pays attention to details like; the firmness of the rice, the consistency of the soup, the texture of the moi moi etc. It just had to be perfect for Aunty Kate.
She showed my sisters and I how to prepare fluffy pancakes with onion and pepper added to it. It was simply delicious. Fluffy, spicy and that lovely crunch of the onion. Yummmm! *rubbing my belle*


I decided to share some of that goodness with you. Adding a bit of my own techniques to make it more fluffier.
Don’t dull! Do it over the weekend if you can. You will definitely love it. It is very different from the rubbery pancakes served out there. And Oh! Pancakes shouldn’t be flat! The fact that it is called pancakes doesn’t mean it should be pressed down and squashed with a frying spoon. Oh no no no! It should be soft and fluffy.

Ingredients:
2 cups of flour
3 eggs (separate the yolk from the egg white)
3 fresh chilli pepper (sliced)
1/2 small onion (diced)
1-3/4 cup water
1/3 cup granulated sugar
1 tsp. baking powder
1/2 tsp. salt
5 tbsp. butter/margarine (melted)
4 heaped tbsp. powdered milk
1/2 tsp. vanilla essence or 1 tsp. vanilla flavouring
Vegetable oil to fry
Preparation:
Step 1:

Sieve the flour, sugar, salt, baking powder into a bowl and mix together thoroughly. Scoop butter/margarine into another bowl melt in a microwave oven for 1 minute (or in a small pan over the fire). Allow to cool.
Step 2:

Crack open the eggs into a bowl. Separate the yolks from the whites. Whisk briskly the whites for a few minutes. Set aside the whites to use soon.
Step 3:

Mix the water with the powdered milk until it is smooth and creamy and pour it into a bowl, stir in the egg yolks, vanilla essence and whisk for a few minutes. Now, add the melted butter/margarine and whisk some more. Pour in the dry ingredients and whisk. Do not whisk batter until it is smooth, leave it be when you start seeing little islands of the mixture floating at the top.
Step 4:

Now, with a wooden spatula, fold in the egg whites gently into the batter. Look closely at the picture to see what I am doing with the whites. After incorporating nicely, add the sliced onion and chilli pepper. Heat up a small frying pan (I used a pan with a diameter of 3 inches). Add a teaspoon of vegetable oil and spread evenly.
Step 5:

Using a ladle (equivalent to 1-1/2 cooking spoon), pour batter into the pan, directly in the middle of the pan, allowing it to flow to the sides. Tilt the pan gently to fill up the sides of the pan, forming the perfect round pancake. Allow to cook over low heat until you see air bubbles at the top and notice the edges of the pancake rounded.

Then flip over with a frying spoon and allow to cook for 1 minute. PLEASE DO NOT PRESS WITH THE FRYING SPOON!. They are pancakes not squashed cakes. 😉
Enjoy with beverages, eggs, sausages, syrups etc.

Nigerian Fluffy Pancakes
I decided not to garnish…leaving you to see the pancakes stacked together in all it’s glory. 🙂 Yummy, fluffy, spicy…crunchy goodness. Chei!!!
Tips:
* Please make sure you follow measurements and instructions closely.
* Watch the pancakes in the pan closely to see the bubbles at the top and the edges puffed up before flipping to the other side to avoid crumpled up pancakes.
* Cook over low heat.
* Invest in different sizes of frying pans. They are handy for getting exact shapes and sizes of pastry and egg meals.
